Basic American Waffles (This recipe received a 5 out 5 rating from site users, predominantly Americans who know their waffles).
Basic Waffles Recipe. NOTE: A US Cup = 250 ml that is the same as a large pub wine glass.
2 cups sifted flour
3 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
3 eggs, separated
1 1/2 cups milk
5 tablespoons melted shortening
Mix and sift dry ingredients. Combine beaten egg yolks, milk and shortening; add to dry ingredients, beating until smooth. Fold in stiffly beaten egg whites. Pour batter into each section of a hot waffle iron.
This makes enough for six people.
Closer to home, Belgian Waffles:
Light and Crispy Belgium Waffles
2 egg yolks
1/2 t. salt
2 Cup of milk
1/3 Cup of oil
2 Cups of flour
2 egg whites, stiffly beaten
1 T. baking powder
Preheat waffle maker. Put all ingredients, except egg whites, in a large mixer bowl.
Beat on low until moistened. Increase to medium, mix until smooth.
By hand, gently fold in beaten egg whites. Pour 1/2 cup (125 ml) batter over grids. Close waffle maker, bake until steam no longer escapes, about 3-5 minutes. Repeat. Serve while hot with your favourite topping.
Yield: 8 Belgium waffles
